Apple Coffee Bread

Apple Coffee Bread


½ cup shortening
1 cup sugar
2 eggs
¾ cup mashed baked apples (recipe)
1¼ cups sifted all-purpose flour
¾ teaspoon soda
½ teaspoon salt


1.                  Cream shortening and sugar until fluffy.
2.                  Add eggs one at a time, beating well after each.
3.                  Stir in mashed apples.
4.                  Sift together dry ingredients; add to apples mixture; mix well
5.                  Pour into greased 9 x 9 x 2-inch pan.
6.                  Bake at 350° for 30 to 35 minutes.
