Ingredients

1 cup long grain rice
2 cups boiling water
1 small onion (chopped and sautéed)
1 stalk celery (chopped)
1 – 2 teaspoons curry powder

Optional

Seasons:  garlic salt, pepper and sugar.

Chicken. 
 
Season chicken tenders, boneless breast or boneless thighs.  Pan fry in butter until cooked.

Method

In a medium size frying pan sauté chopped onions and celery, in butter; add rice to golden brown.   Butter 8 x 10 Pyrex dish.  Add boiling water to Pyrex dish, curry and seasonings, stir.  Add rice mixture and stir.  Add chicken pieces.  Cover and place in 350° oven for 40 to 45 minutes until rice is cooked, tender and water dissolved.  Remove from oven and toss with a folk.  Serve with vegetables.

Curry (plural curries) is an umbrella term referring to a number of dishes originating in the Indian subcontinent. The common feature is the use of complex combinations of spices or herbs, usually including turmeric, cumin, ginger, and fresh or dried hot chilies. The use of the term is generally limited to dishes prepared in a sauce.[1] Curry dishes prepared in the southern states of India may be spiced with leaves from the curry tree.[2]
There are many varieties of dishes called 'curries'. For example, in original traditional cuisines, the precise selection of spices for each dish is a matter of national or regional cultural tradition, religious practice, and, to some extent, family preference. Such dishes are called by specific names that refer to their ingredients, spicing, and cooking methods.[3]Spices are used both whole and ground, cooked or raw, and they may be added at different times during the cooking process to produce different results. The main spices found in most curry powders of the Indian subcontinent are coriandercumin, and turmeric. A wide range of additional spices may be included depending on the geographic region and the foods being included (fish, lentils, red or white meat, rice, and vegetables).[4] Curry powder, a commercially prepared mixture of spices, is largely a Western creation, dating to the 18th century. Such mixtures are commonly thought to have first been prepared by Indian merchants for sale to members of the British Colonial government and armyreturning to Britain.
Dishes called 'curry' may contain fish, meat, poultry, or shellfish, either alone or in combination with vegetables. Additionally, many instead are entirely vegetarian, eaten especially among those who hold ethical or religious proscriptions against eating meat or seafood.
Curries may be either 'dry' or 'wet'. Dry curries are cooked with very little liquid which is allowed to evaporate, leaving the other ingredients coated with the spice mixture. Wet curries contain significant amounts of sauce or gravy based on yogurt, cream, coconut milk, coconut cream, legume purée, tomato purée, sautéed crushed onion or broth.

Banana Pound Cake








Banana Pound Cake
Ingredients
½ cup (1 sticks) butter or margarine
¾ cup sugar
¼ teaspoon salt
1 teaspoon vanilla
2 large eggs
 ¾ cups all purpose flour
¼ cups whole wheat all purpose flour
½ cup mashed banana (1 large banana or 2 small)
½ teaspoon baking powder
Method
1.      Preheat oven to 350°F.  Grease and flour 4 mini loaf pan.
2.    Cream butter and add sugar gradually in a large bowl with electric mixer until light and fluffy.  Beat in eggs, one at a time, until well blended.  Add banana mixture and flavoring.  Add flour, salt and baking powder at low speed, 1/4 cup at a time, scraping down bowl with each addition. 
3.    Spoon batter into prepared loaf pan.  Bake 25 to 30 minutes or until wooden pick inserted near center comes out clean.  Remove from oven.  Cool 5 minutes in pan.  Run knife around edges to release cake; cool additional 30 minutes.  Remove from pan; transfer to wire rack to cool completely.
4.    Makes 2 mini loaves or toaster oven sheet size pan.

Turkey Meatballs

Ingredients

Bag Turkey Meatballs
1/4 cup chopped onions
1/2 teaspoon vinegar
1/4 cup ketchup
1/4 cup BBQ sauce
2 tablespoons brown sugar
Seasonings

Method

Pan fry meatballs in a little oil, just until lightly browned.  In separate pan sautee onions until tender, add all other ingredients and simmer.
Add sauce mixture to meatballs and toss or stir to coat each meatball.   Serve with spaghetti, rice etc.

Spaghetti And Meat Sauce Dinner

Ingredients

1/2 box Spaghetti
1/2 Pound Hamburger
16 oz can Tomato Sauce
1 medium Onion (chopped)
Seasonings
1/4 cup grated Parmesan Cheese

Method

Cook spaghetti as instructed on box.   Blend in cooked spaghetti, when hot, parmesan cheese.

To make meat sauce, sautee onions in olive oil until tender.  Add hamburger, cook and drain excessive oils.  Pour in tomato sauce, seasoning and mix well.   Continue cooking on medium heat for approximately 30 minutes.

Place spaghetti in serving bowl and meat sauce in separate serving bowl.

Pizza Dough Coffee Rolls


Pizza  Dough Recipe 

Ingredients

1 package dry yeast
4 cups flour
Olive oil
2 teaspoons salt
2 cups Tomato Sauce 
2 cups grated Cheddar cheese
2 teaspoons oregano, crumbled

Method
1.                  Dissolve the yeast in ⅓ cup warm water.
2.                  Add the flour.
3.                  2 tablespoons oil.
4.                  1 cup warm water, and the salt.
5.                  Mix together.
6.                  Knead for 10 minutes
7.                  Place in an oiled bowl to rise, covered with plastic wrap.
8.                  When the dough has doubled in bulk, about 2 hours, punch it down and divide in two.
9.                  Let rest 5 minutes.
10.              Preheat oven to 400°.
11.              Roll the dough with a rolling pin or stretch it over your fists until you have two 12 inch circles.
12.              Place on pizza pans or cookie sheets and prick all over.  On each circle, spoon 1 cup tomato sauce; sprinkle  with 1 cup mozzarella and 1 teaspoon oregano.  Drizzle with about 1 tablespoon olive oil. 
13.           Let rest another 10 minutes and then bake for 25 minutes,  until lightly brown.
14.           Cut into wedges and serve hot.
