Spice Muffins

SPICE MUFFINS









Spice Muffins


Ingredients


1 cup flour

Pinch salt

1 1/2 teaspoons baking powder

1/8 teaspoon cinnamon

1/8 teaspoon cloves

1/4 cup sugar

3/4 cups milk

3 tablespoons melted or soft butter

1 beaten egg


Optional:  Sprinkle top with Cinnamon and sugar mixture prior to baking. (1 tablespoon sugar and 1/8 teaspoon cinnamon)



Method

One bowl method.


In a medium size bowl combine  and sift all dry ingredients together.   Make well in center of bowl and add all remaining ingredients.  Fold in and mix well together.  Spoon in greased muffin pans.  Place in preheated oven of 350° and bake for approximately 20 minutes or until golden brown and cake tester is inserted and taken out as clean.  Remove from oven and place on cooling rack for a few minutes.  Serve warm with butter.

Applesauce Muffins

Good Morning!
Hope everyone is having a great day.
Cloudy, wet, rainy day in Bermuda today!
Took a day from the yard gardening to make some muffins this morning.
Recipe will be posted on my blog later for those interested.

Applesauce Muffins

Ingredients

3/4 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda 

Pinch salt

1/4 cup icing sugar (powdered sugar)

1/4 cup Vegetable Oil Spread (I can't believe it is Butter)

1 beaten egg

1 4.0 oz Applesauce

1/4 cup milk

1 teaspoon vanilla

Method

Combine and sift all dry ingredients together.  Make a well in the center and add in well all remaining wet ingredients. Blend and mix all together.  Pour into greased cupcake cups.  Bake at 350℉ for about 15 - 20 minutes.

Chocolate Muffins

CHOCOLATE MUFFINS


 

Chocolate Muffins


Ingredients


1 cup flour
2 teaspoons baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup sugar 
1/4 cup butter (melted)
1 egg (slightly beaten)
1/4 - 1/2 cup milk 
1 teaspoon vanilla
4 oz Melted Chocolate


Method

Combine all dry ingredients together.  Make a well and add milk, egg, butter, chocolate and vanilla; blend together well.

Butter cupcake cups and spoon approximately 1/4 cup batter into cups.

Bake in preheated oven of 350 degrees for 20 minutes or until golden brown with a clean cake tester indicating done. 

Serve warm with butter.

Special K Breakfast Muffins

Ingredients

1/4 cup crushed Special K Cereal Berries

3/4  cup all purpose flour 

1/4 cup sugar

2 teaspoons baking powder 

1/4 cup melted butter

1 egg (slightly beaten)

1 teaspoon vanilla 

1/2 - 1 cup milk (preference of consistency)


Method

Preheat oven to 350 degrees. 

Line or grease muffin cups. 

Combine all dry ingredients together.  Make a well in the center.  Add and stir in melted butter, egg, vanilla and milk.  (add milk gradually to you reach the consistency of your preference).  Pour into muffin cups about a quarter of a cup of batter in each cup.  Optional, sprinkle with a little sugar on top.

Bake in oven for approximately 20 to 30 minutes or until muffins are golden brown and cake tester comes out clean when placed in the center. 

Serve warm.  

Optional:  Butter, jams, jellies, honey etc. can be served with the muffins.

Muffins With Chopped Peanuts And Raisins

Recipe

Ingredients

1 cup flour
2 teaspoons baking powder
1/4 cup sugar
1 egg
1/4 cup butter
1/4  - 1/2 cup milk
1/4 cup chopped raisins and peanuts

Method

Combine all ingredients together.  Blend well.  Spoon in muffin cups.  Bake for approximately 20 minutes in a preheated oven of 350 degrees.

Optional, if you like to use less sugar and butter you can it doesn't change the recipe.  Oil preference too instead of butter

Optional, you can use 3/4 cup flour and 1/4 cup cornmeal which was used in these pictures here.
