Chickpea Cakes

Served here with cabbage and beef.

Chickpea Cake Recipe

Ingredients

Chickpeas

Seasonings:-

Garlic Salt

Pepper

Garlic Powder

Parsley Flakes

Curry Powder

1 egg beaten

Onion (chopped)

Flour (optional) if too sticky

Frying

Vegetable oil

Flour

Frying Pan

Method

Drain Chickpeas.

Mash them like you would mash to make mashed potato.

Season to liking.

Saute onions and add to.

Combine all together well.  If at this point you think too sticky to touch add a little flour.

Roll into cakes and fry.

Dot with paper towel to remove accessive grease.

Serve either hot or room temperature.

Makes about 5.

White Rice With Raisins, Mild Curried Chicken And Broccoli Dinner

Dinner of cooking long grain rice (BEN'S ORIGINAL™ Parboiled Long Grain White Rice (bensoriginal.com)) of the ratio method of 1 cup Rice to 2 cups Water.  Once cooked season, butter and add raisins.

Chicken with ready made diced chicken (Grilled & Ready® Chicken Breast Strips | Tyson® Bran) with a curry gravy.

Broccolli (Broccoli Crowns | Greens & Vegetables | The MarketPlace) boiled accordingly.

Collard Greens And Rice Dinner

 Collard Greens And Rice Dinner

Ingredients

Collard Greens

Onions

Green Pepper

Oregano

Mushrooms

Chicken

Rice

Chicken Bouillon

Water

Seasonings

Method

Chop or dice onions, pepper , mushrooms and chicken.

Sautee  onions and pepper.  Add mushrooms once tender.

Add a cup rice and cook until golden brown.

Add Season (salt, pepper, garlic salt and oregano)

Add boiled 2 cups water with bouillon.

Cook until tender to preference.

Add cooked collard greens and cooked chicken

Optional sprinkle with cheese.
