Orange Marmalade Bar Cookies
Ingredients
1 cup butter
1 cup vegetable shortening
2 cups sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon nutmeg
1 orange rind (approx. 2 teaspoons)
5 cups flour
1. Preheat oven to 350°.
2. Prepare and grease 13 x 9 x 2 in sheet pan. (Optional: layer with parchment paper)
3. Sift flour, baking soda and nutmeg together; set aside.
4. Cream butter and sugar.
5. Add eggs, vanilla and orange rind.
6. Add dry ingredients.
7. Press cookie dough on the bottom of the 13 x 9 baking pan.
8. Smooth on orange marmalade.
9. Add another layer of cookie dough on top of the orange marmalade and press.
10. Bake for approximately 40 minutes or until done and nicely brown.
11. Allow to cool and remove from pan.
12. Frost with orange marmalade frosting.
13. Cut into bars of desired size and serve accordingly. Store in an air tight container.

This recipe originated from a recipe in which my mother (Betty Ming) made for many years the only addition was turning it into a bar cookie and adding Orange Marmalade.
