Easy, Moist Coffee Cake Recipe, 

Perfect Fall Coffee Cake Hack

Cake Recipe

Batter:

1 ½ cups sifted all-purpose flour

2 ½ teaspoons baking powder

1/2 teaspoon cinnamon

1/8 teaspoon ginger (optional)

½ teaspoon salt

1 egg

¾ cup sugar

1/3 cup butter or margarine

½ cup milk

1 carrot grated

1 apple grated


Makes 9 Servings

Preheat oven to 375 degrees.  Grease 6 inch layer-cake pan.

Make Batter:  Sift all dry ingredients together in a bowl; add sugar.  Cut in butter until it forms like bread crumbs look.  Make a well in the center and add milk, beaten egg; apples and carrots.  Mix all together very well..  Pour into prepared pan.  Bake 25 to 30 minutes or until cake tester inserted in center comes out clean.  Cool partially, in pan, on wire rack.  To serve, cut into squares or wedges while still warm.

Recipe

Grease pan accordingly.

Place can apple pie filling and spread accordingly.

Mix cake according to instructions on box.

Pour mixture over apples.

Sprinkle top with cinnamon and sugar.

Bake 320 degrees for approximately 40  minutes or until baked.

Serve accordingly to your liking, warm etc.

Ingredients

⅔ cup Crisco shortening

1½ cups sugar

⅔ cup milk

1 teaspoon almond extract

2 cups flour

1 teaspoon salt

½ teaspoon double active baking powder

3 eggs

Icing: 

Betty Crocker Icing (Chocolate)

Method

1.                  Prepare 8 inch baking pan by greasing and flouring.

2.                  Cream shortening and sugar until light and fluffy.

3.                  Add milk and extracts; blend.

4.                  Stir in dry ingredients, to creamed mixture.  Beat until smooth.

5.                  Add eggs one at a time and beat well after each addition.

6.                  Beat entire mixture well before pouring into greased and floured baking pan.

7.                  Bake at 300° oven for 25 to 30 minutes.

8.                  Frost or Ice as desired.

9.                  Serve accordingly.

I used the instructions on the package here but used milk and water as half and half.  I also used the oil as instructed but used a little butter.  The 1/3 of butter is approximately 5 tables of oil, I used 4 tablespoons of oil and 1 tablespoon of butter.  Reason for the substitutes being what I apparently had available in oil and used melted butter to make up to 1/3 cup.  I was planning on using all milk but didn't have enough milk that day so I used the water and milk.   Cranberries were added at the end of the mixing and folded in about 1/2 cup.

Recipe

Combine by sifting together 1 cup flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1/4 cup sugar;  make a well in the center of mixture and place 1/4 cup soft butter, 1 teaspoon vanilla, 1 egg and 1/2 - 3/4 cup milk.  Blend well.  Fold in 1/4 cup dry cranberries.  Pour into greased baking pan and bake in a 350 degrees oven for approximately 20 to 30 minutes or until cooked.  Let cool and make glaze of icing sugar and little milk.
