Banana Cake Bars

Banana Cake Bars


2 cups flour
2 cups sugar
½ cup butter
2 teaspoons baking powder
1 teaspoons baking soda
2 eggs
2 cups bananas, mashed
½ lemon juiced
1 teaspoon lemon rind
1½ cups milk


1.                  Prepare and grease a 13 x 9 x 1-in sheet pan.
2.                  Preheat oven to 350°.
3.                  Sift flour, baking powder and baking soda, set aside.
4.                  Cream butter and sugar.
5.                  Add eggs one at a time.
6.                  Add bananas, milk, lemon juice and lemon rind.
7.                  Fold in flour mixture.
8.                  Spoon into prepared pan accordingly.
9.                  Bake for 25 to 30 minutes or until cake is done by testing accordingly.
10.              Cool and cut in squares.
11.              Serve as desired.
