Fruit Cake
Ingredients
2
cups flour
2
cups sugar
2
teaspoons baking soda
½ teaspoon
salt
2
tablespoons butter
2
eggs, well beaten
1
(20-ounce) can crushed pineapple
Frosting
1
(8-ounce) package cream cheese
½ cup
butter
1
teaspoon vanilla
¼ teaspoon
lemon extract
2
cups confectioners’ sugar
Method
1.
Preheat oven to 350°.

Grease and flour a 13 x 9-inch baking
pan.
3.
Combine flour, sugar, baking soda and
salt.
4.
Mix in butter.
5.
Add eggs and pineapple; mix well.
6.
Pour into prepared pan.
7.
Bake 35 to 45 minutes.
8.
Cool completely before frosting.
To make frosting, beat cream cheese, butter, vanilla
and lemon extract, gradually adding the confectioners’ sugar. Refrigerate leftover cake. Serve 12 to 15.
