Cinnamon Biscuits

C I N N A M O N   B I S C U I T S 






Cinnamon Biscuits

Ingredients

½ cup cold butter
¼ cup sugar
1 cup flour
¼ teaspoon cinnamon
¼ teaspoon baking powder
⅛ teaspoon salt

Topping
Sprinkle:  Combine together 2 tablespoon sugar and ¼ teaspoon cinnamon

Method

1.     Preheat oven to 350°.
2.     Grease or line with parchment paper cookie sheets.
3.     Sift together, flour, baking powder, cinnamon, salt and sugar.
4.     Add butter and cut in to resemble pea size bread crumbs.
5.     With hand bring all together to form a ball.
6.     Flour bread board and roll out to approximately ¼ inch thick.
7.     Cut out with biscuit cutter of 2 inch to form biscuit shapes.
8.     Place on cookie sheets 2 inches apart.  Sprinkle with sugar mixture.
9.     Bake for 10 to 15 minutes or until lightly golden brown.
10.  Remove from pan and rest on cooling rack to cool.
11.  Makes about 2 dozen.

Cheese Crackers

















Cheese Crackers

Cheese Pastry

Ingredients

1 cup flour
¼ teaspoon salt
¼ teaspoon cayenne pepper
½ cup Crisco or Butter
¼ cup white cheddar cheese
¼ cup cheddar cheese
1 large egg yolk
2 tablespoons water
1 tablespoon sugar
¼ teaspoon baking powder

Method
1.                  Sieve the flour, salt and cayenne pepper then rub in the cooking fat until mixture resembles fine breadcrumbs. 
2.                  Stir in the cheese and bind together with the egg yolk and water.
3.                  Form into a firm dough.
4.                  Roll out dough until about ¼ inch thick and cut out with round cookie cutter.  Prick with a folk.
5.                  Bake in a 425° oven for approximately 10 – 12 minutes.

Recipe was taken from Cookery In Colour, A picture encyclopedia for every occasion edited by Marguerite Patten the chapter on “Entertaining”, page 1026 and 1041 an edition of 1960.


Optional Note:  3/4 cup Flour and 1/4 cup Whole Wheat
Optional Note:  Basic White Sauce With Cheddar Cheese and White Cheddar Cheese.   Chopped Broccoli

Chocolate Chip Sugar Cookies

 CHOCOLATE CHIP SUGAR COOKIES

















Chocolate Chip Sugar Cookies

Ingredients

½ cup butter
½ cup vegetable shortening
1 cups sugar
1 eggs
2 teaspoons vanilla
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon nutmeg
2 ½ - 3 cups flour
1 teaspoon orange rind
¾ cup Chocolate Chips

Optional:  Sprinkles

Method

1.                  Preheat oven to 350°.
2.                  Prepare and grease cookie sheets.
3.                  Sift flour, baking soda, and nutmeg together; set aside.
4.                  Cream butter and sugar.
5.                  Add eggs and vanilla.
6.                  Add orange rind.
7.                  Add dry ingredients.
8.                  Fold in chocolate chips.
9.                  Divide dough in half and form into ball.  Roll out to about ¼ inch thick and cut out with desired cookie cutter.  Sprinkle with desired sprinkles.
10.              Bake for approximately 10 minutes or until done and nicely brown.
11.              Remove immediately from baking sheet onto a wire rack.
12.              Cool completely and serve accordingly.  Store in an air tight container.

Raisin Bran Cookies












Raisin Bran Cookies

Ingredients

¾ cup shortening
¾ cup sugar
¾ cup brown sugar
2 eggs
2 teaspoons vanilla
2¼ cup flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup raisins
1¼ cup chopped nuts

Method

1.                  Heat oven to 375°F.
2.                  Lightly coat baking sheets with no-stick cooking spray.
3.                  Beat shortening, sugar and brown sugar.
4.                  Beat in eggs and vanilla.
5.                  Combine flour, baking soda, cinnamon and salt into a bowl.  Beat in shortening mixture and blend.
6.                  Stir in raisin bran cereal, nuts and raisins. (note the same raisins in the cereal box were used)
7.                  Drop by rounded tablespoonfuls about 2 inches apart on prepared baking sheets.
8.                  Bake 10 to 12 minutes or until light brown.  Cool on baking sheet 2 minutes.
9.                  Place on cooling rack to cool completely.

Recipe derived from on a package of Crisco from a recipe called “Cranberry Walnut Oatmeal Cookies”. 


Please note the following were substituted accordingly in this recipe.

·         Oats with Raisin Bran Cereal
·         Cranberries with Raisins
·         Walnuts with Unsalted Dry Roasted Peanuts
