Rice Krispies Treat Bars With Trail Mix

Ingredients

3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows


Method

1.                  In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2.                  Add Kellogg’s Rice Krispies cereal. Stir until well coated.

3.                  Blend in Trail Mix.

4.                  Using buttered spatula or wax paper evenly press mixture into 12 x 7 x 2-inch pan coated with cooking spray. Cool. Cut into squares or bars.

BREATH OF SPRING CAKE


BREATH OF SPRING CAKE 











Breath Of Spring Cake

Ingredients

Makes 12 Servings

½ cup vegetable shortening
1⅓ cups sugar
1 teaspoon salt
2 cups flour
1 cup milk, divided
1 tablespoon baking powder
2 eggs

Method

1.                  Grease a 13 x 9- inch baking pan; set aside.
2.                  Preheat oven to 375° F.
3.                  In a large mixing bowl, cream shortening, sugar, and salt.
4.                  Alternately add flour and ⅔ cup milk, beginning and ending with flour, beating well after each addition.
5.                  Add baking powder; blend well.
6.                  Add eggs, remaining ⅓ cup milk, and vanilla; blend well.
7.                  Beat 2 minutes on medium speed or until batter is thin and smooth.
8.                  Pour batter into prepared pan.  Bake for 25 minutes or until a wooden pick inserted in the center comes out clean.  Cool in pan on a wire rack.
9.                  Frost if desired.

Optional:  Orange peel can be added to cake mixture.  Glaze was made with butter, powdered sugar and juice from orange.

Classic Sugar Cookies

Classic Sugar Cookies

Ingredients

180 ml (3/4 cup) softened butter
250 ml (1 cup) Lantic Granulated Sugar
2 eggs
5 ml (1 teaspoon) vanilla extract
625 ml (2 ½ cups) all-purpose flour
5 ml (1 teaspoon) baking powder
Additional Lantic Granulated Sugar for rolling

Method
1.                  Preheat oven to 325°F / 160°C.
2.                  Beat the butter with the sugar until fluffy in a large mixing bowl, beat in the eggs and vanilla.
3.                  Meanwhile, stir the flour with the baking powder.
4.                  Gradually beat the flour mixture into the sugar mixture until well combined.
5.                  Form the dough into 36, 1-inch (2.5 cm) balls.  Roll each ball in sugar and places.  2 –inches (5 cm) apart on parchment paper-lined baking sheets. 
6.                  Bake in batches, for 12 to 14 minutes or until bottoms are golden. 
7.                  Cool completely on a rack.
8.                  Makes about 3 dozen cookies.

Chocolate Rice Krispies Bars


CHOCOLATE RICE KRISPIES BARS









Chocolate Rice Krispies Bars

Ingredients

1 bag of Hershey’s Kisses Milk Chocolate (5.3 oz)
¼ cup peanuts
¼ cup raisins
¼ teaspoon corn syrup
1½ - 2 cups Rice Krispies
½ teaspoon butter or margarine

Method

1.                  Melt butter, chocolate and corn syrup together.
2.                  Blend in Rice Krispies, peanuts and raisins.
3.                  Spoon onto parchment paper that has been cut in about a 7 x 7 square.  Form the mixture into 6 x 6 x 2 square with rubber spatula.  Smooth top and edges.
4.                  Refrigerate unto firm and set for a few minutes.
5.                  Cut into desired shapes.
